Faire chauffer huile et beurre dans une cocotte. Y faire revenir ail, \u00e9chalotes, oignons, ajouter le bouquet garni.<br \/>\n2 &#8211; Couper la roussette en 8, la faire dorer dans la cocotte. Verser le vin, laisser cuire 15 minutes.<br \/>\n3 &#8211; Laver et \u00e9mincer les champignons. Oter le poisson, faire cuire les champignons dans la sauce 10 minutes.<br \/>\n4 &#8211; Remettre le poisson et laisser mijoter \u00e0 feu doux 10 minutes. Saler, poivrer, retirer le bouquet garni.
