Faites chauffer l\u2019huile d\u2019olive dans une po\u00eale \u00e0 feu moyen. Saisissez les dos de cabillaud pendant 2 \u00e0 3 minutes de chaque c\u00f4t\u00e9, juste pour les dorer l\u00e9g\u00e8rement. Transf\u00e9rez-les ensuite dans un plat allant au four et r\u00e9servez.<\/li>\n\n\n\n<li><strong>Pr\u00e9parer la sauce au parmesan et citron :<\/strong><br>Dans une petite casserole, faites chauffer la cr\u00e8me fra\u00eeche \u00e0 feu doux. Ajoutez le parmesan r\u00e2p\u00e9, l\u2019ail hach\u00e9, la moutarde et le jus de citron. M\u00e9langez bien jusqu\u2019\u00e0 ce que le parmesan soit fondu et que la sauce soit bien homog\u00e8ne. Assaisonnez avec du sel et du poivre selon votre go\u00fbt. Laissez mijoter la sauce \u00e0 feu doux pendant environ 5 minutes, en remuant r\u00e9guli\u00e8rement. En fin de cuisson, incorporez les zestes de citron pour ajouter une touche de fra\u00eecheur \u00e0 la sauce.<\/li>\n\n\n\n<li><strong>Cuisson au four :<\/strong><br>Versez g\u00e9n\u00e9reusement la sauce au parmesan et citron sur les dos de cabillaud dans le plat. Enfournez pendant 10 \u00e0 12 minutes, jusqu\u2019\u00e0 ce que le cabillaud soit bien cuit \u00e0 c\u0153ur mais encore tendre et moelleux.<\/li>\n\n\n\n<li><strong>Service :<\/strong><br>Servez les dos de cabillaud napp\u00e9s de sauce cr\u00e9meuse, garnis de persil frais pour une touche de couleur et de saveur.
