class=\"wp-block-heading\">Mousse pralin\u00e9e<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>310&nbsp;grammes&nbsp;cr\u00e8me liquide enti\u00e8re&nbsp;bien froide<\/li>\n\n\n\n<li>250&nbsp;grammes&nbsp;chocolat pralin\u00e9&nbsp;Pralinoise<\/li>\n\n\n\n<li>2.5&nbsp;feuilles de g\u00e9latine&nbsp;soit 5 grammes<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">D\u00e9coration<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>25 grs de pralin\u00a0environ<\/li>\n<\/ul>\n\n\n\n<p>Pr\u00e9paration :<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Dacquoise<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Pr\u00e9chauffer le four \u00e0 180\u00b0c, chaleur tournante.<\/li>\n\n\n\n<li>Dans un saladier, m\u00e9langer la poudre d&rsquo;amande, le sucre glace et la ma\u00efzena.<\/li>\n\n\n\n<li>Monter les blancs d&rsquo;oeufs en neige ferme.<\/li>\n\n\n\n<li>Incorporer doucement, en soulevant, les blancs en neige dans le m\u00e9lange de poudres.<\/li>\n\n\n\n<li>Poser un cercle de 20 cm de diam\u00e8tre beurr\u00e9 sur une plaque perfor\u00e9e tapiss\u00e9e de papier sulfuris\u00e9e.<\/li>\n\n\n\n<li>Verser la 1000w\"><\/li>\n\n\n\n<li>Sortir la plaque du four et laisser refroidir totalement sur une grille sans d\u00e9cercler.<\/li>\n\n\n\n<li>Une fois la dacquoise bien refroidie (au moins 2 heures), d\u00e9cercler et la d\u00e9couper \u00e0 la taille d&rsquo;un cercle de 18 cm de diam\u00e8tre.<img loading=\"lazy\" decoding=\"async\" width=\"300\" height=\"200\" rhodo\u00efd dans le cercle de 18 cm et d\u00e9poser le tout autour de la dacquoise (j&rsquo;ai un rhodo\u00efd pas assez haut : 4.5 cm de hauteur, donc je double la hauteur avec une autre bande).<img 1000w\"><\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Mousse pralin\u00e9e<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Ramollir les feuilles de g\u00e9latine \u00e0 tremper dans de l&rsquo;eau froide.<\/li>\n\n\n\n<li>Dans un bol adapt\u00e9 au micro-ondes, mettre le chocolat pralin\u00e9 cass\u00e9 en morceaux et fondre au micro-ondes en surveillant (750w, d&rsquo;abord 30 secondes, m\u00e9langer et remettre 20 secondes, m\u00e9langer). Laisser ti\u00e9dir, le temps de pr\u00e9parer la suite.<\/li>\n\n\n\n<li>Dans une petite casserole, verser 50 grammes de cr\u00e8me liquide enti\u00e8re et faire bouillir. Ajouter la g\u00e9latine ramolli et essor\u00e9e et fouetter pour la dissoudre. R\u00e9server.<\/li>\n\n\n\n<li>La chantilly : dans le bol du robot p\u00e2tissier verser 260g de cr\u00e8me liquide enti\u00e8re bien froide et fouetter pour la monter en chantilly.<\/li>\n\n\n\n<li>Verser la cr\u00e8me \u00e0 la g\u00e9latine dans la chantilly, ainsi que le chocolat fondu et les incorporer avec une maryse.<\/li>\n\n\n\n<li>Verser la mousse sur la dacquoise.
