Placez ensuite le r\u00f4ti de biche dans un plat \u00e0 four, salez, poivrez, arrosez-le d\u2019huile et parsemez de thym et de laurier. Faites cuire pendant 30 \u00e0 35 minutes.<\/p>\n\n\n\n<p>Retirez le r\u00f4ti du four puis disposez-le dans une grande assiette et couvrez-le de papier aluminium. Laissez-le reposer 5 minutes.<\/p>\n\n\n\n<p>Pendant ce temps, d\u00e9layez le fond de veau dans 10 cl d\u2019eau fr\u00e9missante puis versez le tout dans le plat de cuisson.
