D\u00e9cortiquer les crevettes. Laver le poireau et l\u2019\u00e9mincer finement. Eplucher l\u2019ail et l\u2019\u00e9craser. Eplucher l\u2019\u00e9chalote et l\u2019\u00e9mincer.<\/p>\n\n\n\n<p><strong>2-<\/strong>&nbsp;Faire chauffer le beurre dans une po\u00eale \u00e0 feu moyen. Quand il est chaud, mettre le poireau \u00e9minc\u00e9 et faire revenir \u00e0 feu doux environ 5 minutes.<\/p>\n\n\n\n<p><strong>3-<\/strong>&nbsp;Ajouter ensuite l\u2019ail et l\u2019\u00e9chalote et poursuivre la cuisson 4-5 mn de plus en&nbsp; m\u00e9langeant r\u00e9guli\u00e8rement. Ajouter les crevettes, puis saler, poivrer et ajouter le piment de Cayenne. M\u00e9langer 2 minutes.<\/p>\n\n\n\n<p><strong>4-<\/strong>&nbsp;Saupoudrer la pr\u00e9paration de farine, puis verser le lait froid et faire \u00e9paissir en remuant r\u00e9guli\u00e8rement (2-5 minutes). Ajouter la moutarde, la cr\u00e8me liquide et retirer du feu.
