40g sucre (20+20)<\/p>\n\n\n\n<p id=\"viewer-tf6o\">&#8211; 2 jaunes d\u2019\u0153ufs<\/p>\n\n\n\n<p id=\"viewer-2jfia\">&#8211; 15g ma\u00efzena<\/p>\n\n\n\n<p id=\"viewer-b7827\">&#8211; 200mL cr\u00e8me liquide enti\u00e8re 30%MG<\/p>\n\n\n\n<p id=\"viewer-a4pdg\">1) Hydrater la g\u00e9latine dans un bol d\u2019eau froide 10 minutes<\/p>\n\n\n\n<p id=\"viewer-8f003\">2) Bouillir le lait, la gousse de vanille fendue et gratt\u00e9e et la moiti\u00e9 du sucre<\/p>\n\n\n\n<p id=\"viewer-5r2v7\">3) Pendant ce temps, fouetter les jaunes et le reste du sucre, et ajouter la ma\u00efzena<\/p>\n\n\n\n<p id=\"viewer-1s15l\">4) Verser le lait chaud petit \u00e0 petit sur le m\u00e9lange avec les \u0153ufs et m\u00e9langer (attention aux grumeaux)<\/p>\n\n\n\n<p id=\"viewer-5mh9m\">5) Remettre le tout sur feu doux sans cesser de remuer jusqu\u2019\u00e0 \u00e9paississement<\/p>\n\n\n\n<p id=\"viewer-931b2\">6) Hors du feu, ajouter la g\u00e9latine essor\u00e9e<\/p>\n\n\n\n<p id=\"viewer-cr00\">7) R\u00e9server au frais<\/p>\n\n\n\n<p id=\"viewer-2ah90\">8) Lorsque la cr\u00e8me a refroidi, fouetter la cr\u00e8me liquide pour la monter et l\u2019incorporer d\u00e9licatement au m\u00e9lange<\/p>\n\n\n\n<p id=\"viewer-6tq43\"><strong>CHIFFON CAKE<\/strong><\/p>\n\n\n\n<p id=\"viewer-clsua\">&#8211; 65g huile<\/p>\n\n\n\n<p id=\"viewer-avqd1\">&#8211; 45g eau<\/p>\n\n\n\n<p id=\"viewer-esqgc\">&#8211; 1 pinc\u00e9e de sel<\/p>\n\n\n\n<p id=\"viewer-67hn8\">&#8211; 100g sucre (20 + 80)<\/p>\n\n\n\n<p id=\"viewer-2cn16\">&#8211; 10g ma\u00efzena<\/p>\n\n\n\n<p id=\"viewer-48j69\">&#8211; 100g farine<\/p>\n\n\n\n<p id=\"viewer-6rf1t\">&#8211; 4 jaunes d\u2019\u0153ufs<\/p>\n\n\n\n<p id=\"viewer-2e3k7\">&#8211; 1 \u0153uf entier<\/p>\n\n\n\n<p id=\"viewer-2i5t6\">&#8211; 4 blancs d\u2019\u0153ufs<\/p>\n\n\n\n<p id=\"viewer-c5il3\">1) M\u00e9langer l\u2019huile, l\u2019eau, le sel et les 20g de sucre<\/p>\n\n\n\n<p id=\"viewer-63p3j\">2) Ajouter la farine et la ma\u00efzena tamis\u00e9es<\/p>\n\n\n\n<p id=\"viewer-2gb02\">3) Ajouter les jaunes d\u2019\u0153ufs et l\u2019\u0153uf entier<\/p>\n\n\n\n<p id=\"viewer-fpt29\">4) Monter les blancs en neige en ajoutant petit \u00e0 petit les 80g de sucre pour former une meringue lisse et brillante<\/p>\n\n\n\n<p id=\"viewer-32on6\">5) Incorporer d\u00e9licatement la meringue au reste du m\u00e9lange<\/p>\n\n\n\n<p id=\"viewer-cghbc\">6) Verser dans un moule de 20cm chemis\u00e9 uniquement dans le fond<\/p>\n\n\n\n<p id=\"viewer-9mq0m\">7) Cuire 45min \u00e0 150\u00b0C<\/p>\n\n\n\n<p id=\"viewer-c6gfd\">8) Laisser refroidir \u00e0 l\u2019envers sur une grille, d\u00e9mouler une fois froid<\/p>\n\n\n\n<p id=\"viewer-b8rf9\"><strong>POMMES VANILL\u00c9ES<\/strong><\/p>\n\n\n\n<p id=\"viewer-818ul\">&#8211; 4 pommes<\/p>\n\n\n\n<p id=\"viewer-9djfi\">&#8211; 40g sucre<\/p>\n\n\n\n<p id=\"viewer-f873l\">&#8211; 40g eau<\/p>\n\n\n\n<p id=\"viewer-8bd19\">&#8211; 1 gousse de vanille fendue et gratt\u00e9e (Vanilla Gasy)<\/p>\n\n\n\n<p id=\"viewer-9v5ae\">1) \u00c9plucher les pommes et les couper en petits d\u00e9s<\/p>\n\n\n\n<p id=\"viewer-a489q\">2) Cuire le tout \u00e0 feu doux jusqu\u2019\u00e0 ce que les pommes deviennent fondantes<\/p>\n\n\n\n<p id=\"viewer-sfjk\"><strong>CHANTILLY MASCARPONE<\/strong><\/p>\n\n\n\n<p id=\"viewer-bp0cc\">&#8211; 200mL cr\u00e8me liquide enti\u00e8re 30%MG<\/p>\n\n\n\n<p id=\"viewer-ek5hd\">&#8211; 250g mascarpone<\/p>\n\n\n\n<p id=\"viewer-2rc9l\">&#8211; 40g sucre glace<\/p>\n\n\n\n<p id=\"viewer-d5e6r\">&#8211; 1 gousse de vanille (Vanilla Gasy)<\/p>\n\n\n\n<p id=\"viewer-f66k6\">1) Gratter la gousse de vanille pour r\u00e9cup\u00e9rer les grains<\/p>\n\n\n\n<p id=\"viewer-5134k\">2) Fouetter tous les ingr\u00e9dients jusqu\u2019\u00e0 obtenir une chantilly bien ferme<\/p>\n\n\n\n<p id=\"viewer-duk9j\"><strong>Chiffon cake pommes-vanille<\/strong><\/p>\n\n\n\n<p id=\"viewer-h35u\"><strong>MONTAGE<\/strong><\/p>\n\n\n\n<p id=\"viewer-auudt\">&#8211; Pralin<\/p>\n\n\n\n<p id=\"viewer-6cftl\">1) Couper le chiffon cake en 2<\/p>\n\n\n\n<p id=\"viewer-cj2su\">2) Pocher un \u00ab boudin de protection \u00bb de chantilly mascarpone sur le bord du cake (=faire le tour du cake avec la chantilly, ce \u00ab boudin \u00bb permet de contenir les pommes et la cr\u00e8me diplomate pour qu\u2019elles ne s\u2019\u00e9chappent pas lorsque l\u2019on posera le 2\u00e8me morceau de cake)<\/p>\n\n\n\n<p id=\"viewer-a8qms\">3) Garnir le centre de cr\u00e8me diplomate et d\u00e9poser les pommes fondantes<\/p>\n\n\n\n<p id=\"viewer-c0o58\">4) D\u00e9poser la deuxi\u00e8me partie du chiffon cake pour recouvrir<\/p>\n\n\n\n<p id=\"viewer-34sk\">5) Recouvrir le tout de chantilly mascarpone<\/p>\n\n\n\n<p id=\"viewer-8t7df\">6) Saupoudrer de pralin autour et pocher de la chantilly mascarpone sur le dessus pour la d\u00e9co.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>CR\u00c8ME DIPLOMATE &#8211;
