Pr\u00e9chauffez votre four \u00e0 170\u00a0\u00b0C (th. 5\/6). Cassez 70\u00a0g de chocolat en morceaux, faites-les fondre au bain-marie. Dans une jatte, battez 3 jaunes d\u2019oeufs avec le sucre glace pendant 2\u00a0mn. Ajoutez la Ma\u00efzena, le cacao et\u00a0 le chocolat fondu.<br>2. Montez les 3 blancs en neige ferme et incorporez-les \u00e0 la pr\u00e9paration au cacao. Transf\u00e9rez dans un moule \u00e0 charni\u00e8re de 20\u00a0cm de diam\u00e8tre environ, tapiss\u00e9 d\u2019une feuille de papier cuisson beurr\u00e9e. Enfournez pendant 15 \u00e0 20 mn.<br>3. Cassez le reste de chocolat en morceaux et faites-les fondre au bain-marie. Ajoutez la fleur de sel puis laissez ti\u00e9dir. S\u00e9parez les blancs des jaunes d\u2019oeufs restants et m\u00e9langez les jaunes au chocolat.<br>4. Montez les blancs d\u2019oeufs en neige puis la cr\u00e8me en\u00a0chantilly. Incorporez-les, dans cet ordre, \u00e0 la pr\u00e9paration au chocolat. Versez dans le moule sur le g\u00e2teau et lissez. Couvrez et r\u00e9servez au frais au moins 3 h.
