Le sucre va commencer \u00e0 se dissoudre, devenir liquide puis se transformer en un liquide ambr\u00e9 : \u00e7a prend \u00e0 peu pr\u00e8s 3 ou 4 minutes. Pendant ce temps, dans une autre casserole, faites chauffer la cr\u00e8me liquide et&nbsp;<a href=\"https:\/\/cuisine.journaldesfemmes.fr\/astuces-termes-et-tournemains\/1957788-reserver-definition\/\">r\u00e9servez<\/a>.<\/li><li><strong>2<\/strong>D\u00e8s que le sucre est transform\u00e9 en caramel, retirez la casserole du feu et ajoutez d\u00e9licatement une petite partie de la cr\u00e8me. Attention aux projections. Remuez vivement et incorporez le reste petit \u00e0 petit. Quand il n&rsquo;y a plus de bouillons, ajoutez le beurre et remuez \u00e0 nouveau jusqu&rsquo;\u00e0 consistance d&rsquo;une cr\u00e8me moyennement liquide.
