Dans un grand bol, battez les jaunes d\u2019\u0153ufs avec le sucre jusqu\u2019\u00e0 ce qu\u2019ils blanchissent. Placez le bol au bain-marie et battez encore 5 \u00e0 8 minutes environ en ajoutant peu \u00e0 peu le champagne pour obtenir un m\u00e9lange mousseux.<\/li><li>Pr\u00e9chauffez le four \u00e0 220 \u00b0c (th. 7-8). Pelez et\u00a0<a href=\"https:\/\/cuisine.journaldesfemmes.fr\/astuces-termes-et-tournemains\/1958465-ciseler-definition\/\">ciselez<\/a>\u00a0l\u2019\u00e9chalote. Faites-la\u00a0<a href=\"https:\/\/cuisine.journaldesfemmes.fr\/astuces-termes-et-tournemains\/1958204-blondir-definition\/\">blondir<\/a>\u00a0dans une po\u00eale avec le beurre. Ajoutez les champignons, les fonds d\u2019artichaut, salez et poivrez ; laissez\u00a0<a href=\"https:\/\/cuisine.journaldesfemmes.fr\/astuces-termes-et-tournemains\/1958011-dorer-definition\/\">dorer<\/a>\u00a08 minutes. Ajoutez les langoustines et laissez cuire 5 minutes (mais pas plus) en les retournant.<\/li><li>Pour finir : r\u00e9partissez le contenu de la po\u00eale dans des assiettes l\u00e9g\u00e8rement creuses et versez dessus le sabayon.\u00a0<a href=\"https:\/\/cuisine.journaldesfemmes.fr\/astuces-termes-et-tournemains\/1958090-passer-definition\/\">Passez<\/a>\u00a0au four pendant 4 minutes.
