Pilez tous ces ingr\u00e9dients jusqu&rsquo;\u00e0 obtenir une p\u00e2te homog\u00e8ne.<br>3 &#8211; Chauffez votre cocotte \u00e0 feu moyen, ajouter un peu de mati\u00e8re grasse puis la viande et faites colorer sur toutes les faces \u00e0 feu fort tout en remuant. Salez, d\u00e9barrassez et laissez reposer.<br>4 &#8211; Dans la m\u00eame cocotte, r\u00e9alisez le caramel. Mettez \u00e0 feu doux, ajoutez le sucre et environ 5 cl d&rsquo;eau. Quand le caramel a une belle couleur et qu&rsquo;il est bien mousseux, versez le jus de citron. Cette m\u00e9thode s&rsquo;appelle d\u00e9cuire un caramel. \u00c9teignez le feu, votre caramel est pr\u00eat.<br>5 &#8211; Remettez la viande dans la cocotte, ajoutez la p\u00e2te aromatique, la sauce nuoc-m\u00e2m, la sauce soja et le litre d&rsquo;eau de coco. M\u00e9langez bien, mettez \u00e0 feu moyen et atteindre le premier fr\u00e9missement.
