{"id":4879,"date":"2022-06-12T16:56:17","date_gmt":"2022-06-12T15:56:17","guid":{"rendered":"https:\/\/recettes.keke-geek.fr\/?p=4879"},"modified":"2022-06-12T16:56:17","modified_gmt":"2022-06-12T15:56:17","slug":"tourbillon-framboise-amandes-et-mascarpone","status":"publish","type":"post","link":"https:\/\/recettes.keke-geek.fr\/?p=4879","title":{"rendered":"Tourbillon framboise, amandes et mascarpone"},"content":{"rendered":"\n<p>Pr\u00e9paration : 30 mn<\/p>\n\n\n\n<p>Cuisson : 15 mn<\/p>\n\n\n\n<p>Ingr\u00e9dients (pour 6 personnes) :<\/p>\n\n\n\n<p>Biscuit aux amandes :<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>3\u00a0oeufs<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>80 grs  d&rsquo;amandes en poudre<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>10 grs de ma\u00efzena<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>80 grs sucre en poudre<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>1cuill\u00e8re \u00e0 caf\u00e9 levure chimique<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>1 pinc\u00e9e de sel<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>1cc ar\u00f4me amandes am\u00e8res<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>50 grs amandes enti\u00e8res<\/li><\/ul>\n\n\n\n<p>Pr\u00e9paration :<\/p>\n\n\n\n<p>1 Pr\u00e9chauffer le four \u00e0 180\u00b0.<\/p>\n\n\n\n<p>2 H\u00e2cher grossi\u00e8rement les amandes enti\u00e8res.<\/p>\n\n\n\n<p>3 Battre les jaunes d&rsquo;oeufs avec le sucre pour faire blanchir le m\u00e9lange.<\/p>\n\n\n\n<p>4 M\u00e9langer la poudre d&rsquo;amandes, la ma\u00efzena, la levure et le sel. Puis ajouter en pluie sur les jaunes.<\/p>\n\n\n\n<p>5 Ajouter l&rsquo;ar\u00f4me. Fouetter.<\/p>\n\n\n\n<p>6 Battre les blancs d&rsquo;oeufs en neige ferme avec le sel.<\/p>\n\n\n\n<p>7 Incorporer 1\/3 \u00e0 la p\u00e2te en fouettant \u00e9nergiquement pour assouplir. Puis, ajouter les 2\/3 tr\u00e8s d\u00e9licatement.<\/p>\n\n\n\n<p>8 Ajouter les amandes hach\u00e9es grossi\u00e8rement et m\u00e9langer doucement.<\/p>\n\n\n\n<p>9 Verser dans un cercle beurr\u00e9\u00a0de 23cm de diam\u00e8tre, plac\u00e9 sur une plaque recouverte de papier sulfuris\u00e9.<\/p>\n\n\n\n<p>10 Cuire 15mn.<\/p>\n\n\n\n<p>11 Laisser refroidir. D\u00e9mouler le biscuit \u00e0 l&rsquo;envers sur la plaque et le tasser dans un cercle de 21cm de diam\u00e8tre.<\/p>\n\n\n\n<p>12 Baisser le four \u00e0 160\u00b0.<\/p>\n\n\n\n<p>Ingr\u00e9dients :<\/p>\n\n\n\n<p>Douceur&nbsp;framboises :<\/p>\n\n\n\n<p>2 oeufs<\/p>\n\n\n\n<p>200 grs framboises surgel\u00e9es<\/p>\n\n\n\n<p>50 grs sucre<\/p>\n\n\n\n<p>20 grs farine<\/p>\n\n\n\n<p>Pr\u00e9paration :<\/p>\n\n\n\n<p>1 D\u00e9congeler les framboises au micro-ondes (10mn) et mixer en pur\u00e9e.<\/p>\n\n\n\n<p>2 Fouetter les oeufs avec le sucre.<\/p>\n\n\n\n<p>3 Ajouter la farine puis la pur\u00e9e de framboises. Fouetter.<\/p>\n\n\n\n<p>4 Verser le m\u00e9lange framboises sur le biscuit et enfourner 25mn \u00e0 160\u00b0.<\/p>\n\n\n\n<p>5 Retirer du four.<\/p>\n\n\n\n<p>6 Placer le cercle sur l&rsquo;assiette de pr\u00e9sentation, sans le papier sulfuris\u00e9.\u00a0Laisser refroidir.<\/p>\n\n\n\n<p>Ingr\u00e9dients:<\/p>\n\n\n\n<p>Tourbillon mascarpone :<\/p>\n\n\n\n<p>2 oeufs<\/p>\n\n\n\n<p>250 g mascarpone<\/p>\n\n\n\n<p>50 g sucre en poudre<\/p>\n\n\n\n<p>2 feuilles g\u00e9latine<\/p>\n\n\n\n<p>1cuill\u00e8re \u00e0 soupe sucre glace<\/p>\n\n\n\n<p>2 \u00e0 3 cuill\u00e8res \u00e0 soupe  d&rsquo;eau chaude<\/p>\n\n\n\n<p>Pr\u00e9paration :<\/p>\n\n\n\n<p>1Tremper la g\u00e9latine dans de l&rsquo;eau froide.<\/p>\n\n\n\n<p>2 Battre les jaunes d&rsquo;oeufs avec le sucre pour faire blanchir le m\u00e9lange.<\/p>\n\n\n\n<p>3 Ajouter le mascarpone. Et fouetter pendant 4mn.<\/p>\n\n\n\n<p>4 Dissoudre la g\u00e9latine essor\u00e9e dans de l&rsquo;eau chaude et l&rsquo;incorporer \u00e0 la pr\u00e9paration pr\u00e9c\u00e9dente.
