Faites tremper les pois cass\u00e9s 1 heure dans de l\u2019eau froide.<br>2. Pendant ce temps, pelez et coupez la carotte en rondelles, et pelez et \u00e9mincez finement l\u2019oignon.<br>3. Plongez les pois cass\u00e9s \u00e9goutt\u00e9s dans une grande casserole d\u2019eau. Ajoutez l\u2019oignon, les lardons, la carotte et le\u00a0<a href=\"https:\/\/odelices.ouest-france.fr\/actualites\/astuces-cuisine\/quest-quun-bouquet-garni-lutiliser-25567\/\">bouquet garni<\/a>. Portez \u00e0 \u00e9bullition et laissez cuire environ 1 h \u00e0 feu moyen.<br>4. Egouttez les l\u00e9gumes et les lardons en conservant l\u2019eau de cuisson et \u00e9crasez-les avec un moulin \u00e0 l\u00e9gumes ou dans un mixeur. Incorporez selon votre go\u00fbt de l\u2019eau de cuisson. Cette pur\u00e9e doit rester assez \u00e9paisse. Salez si besoin. <br><br> 5.
