Faites-les fondre dans un po\u00ealon avec un peu de beurre pendant 2 ou 3 minutes.<\/p>\n\n\n\n<p>\u00a0<\/p>\n\n\n\n<p>2 Ajoutez la cr\u00e8me, la moutarde et l&rsquo;estragon cisel\u00e9 (dosez selon vos go\u00fbts). Poivrez et m\u00e9langez sur feu doux jusqu&rsquo;\u00e0 ce que la sauce \u00e9paississe. Gardez au chaud. <\/p>\n\n\n\n<p>3 Pour les filets de sole : \u00e9pongez-les et passez-les dans la farine. Faites fondre du beurre dans une grande po\u00eale, d\u00e9posez-y les soles, salez et poivrez.
