Lavez-les et \u00e9pongez-les. Passez-les dans la farine.<br \/>\n2 &#8211; Pelez les gousses d\u2019ail. \u00c9crasez-en deux sous une lame de couteau. Hachez les autres.<br \/>\n3 &#8211; Hachez la mie de pain.<br \/>\n4 &#8211; \u00c9bouillantez, pelez et \u00e9p\u00e9pinez les tomates. Coupez-les en d\u00e9s. Mettez-les dans une petite casserole avec 30 g de beurre, sel et poivre. Couvrez. Faites cuire 15 minutes \u00e0 feu tr\u00e8s doux en remuant de temps en temps.<br \/>\n5 &#8211; Chauffez l\u2019huile dans une po\u00eale \u00e0 feu vif. Faites revenir les noix de saint-jacques jusqu\u2019\u00e0 ce qu\u2019elles soient color\u00e9es. Salez, poivrez, ajoutez les deux gousses d\u2019ail \u00e9cras\u00e9es. Couvrez et laissez cuire \u00e0 feu tr\u00e8s doux 10 minutes.<br \/>\n6 &#8211; M\u00e9langez la mie de pain, l\u2019ail et le persil hach\u00e9s. Faites-les l\u00e9g\u00e8rement revenir dans le reste du beurre.<br \/>\n7 &#8211; \u00c9gouttez les noix de leur huile de cuisson. Mettez-les dans un plat chaud. Arrosez du jus de citron. Versez dessus les tomates cuites.
