Mettez-les dans une bo\u00eete herm\u00e9tique avec le jus et le zeste de l&rsquo;orange finement r\u00e2p\u00e9, l&rsquo;ail hach\u00e9 ou pass\u00e9 au presse-ail, le safran et la vodka. Laissez mariner au moins 1 heure.<br \/>\n2 Au bout de ce temps, \u00e9gouttez les gambas. R\u00e9servez la marinade. Faites chauffer 2 cuill\u00e8res \u00e0 soupe d&rsquo;huile dans un wok, \u00e0 feu vif. Quand l&rsquo;huile est bien chaude, faites revenir rapidement les gambas (1 minute maximum).<br \/>\n3 Baissez le feu, ajoutez le fond de crustac\u00e9 que vous aurez d\u00e9lay\u00e9 dans 2 cuill\u00e8res \u00e0 soupe d&rsquo;eau chaude ainsi que la marinade. Laissez mijoter encore 2 \u00e0 3 minutes maximum, selon la taille des gambas.
