300 gros magrets de canard<br \/>\n&#8211; 100 g de foie gras de canard cru<br \/>\n&#8211; 50 g de lardons fum\u00e9s<br \/>\n&#8211; 1 chou vert<br \/>\n&#8211; 1 botte de ciboules<br \/>\n&#8211; 20 cl de bouillon de volaille<br \/>\n&#8211; 10 cl de bi\u00e8re<br \/>\n&#8211; 3 cuill\u00e8res \u00e0 soupe d&rsquo;huile d&rsquo;olive<br \/>\n&#8211; 50 g d ebeurre<br \/>\n&#8211; 3 cuill\u00e8res \u00e0 soupe d&rsquo;\u00e9pices m\u00e9lang\u00e9es moulues (cumun, coriandre, curry,<br \/>\nmuscade)<br \/>\n&#8211; sel, poivre<br \/>\n<strong><span style=\"color: #ff00ff;\">Pr\u00e9paration :<br \/>\n<\/span><\/strong>1 &#8211; Dans un bol m\u00e9langer une cuill\u00e8re d&rsquo;huile et les \u00e9pices, inciser la peau des<br \/>\nmagrets en croisillons, les badigeonner du m\u00e9lange et r\u00e9server 30 mn, \u00e9liminer<br \/>\nles premi\u00e8res feuilles du chou et l&rsquo;effeuiller.<br \/>\n2\u00a0&#8211; Ebouillanter 6 grandes feuilles 2 mn \u00e0 l&rsquo;eau sal\u00e9e, \u00e9goutter, \u00e9mincer le<br \/>\nreste du chou, ciseler les ciboules.<br \/>\n3 &#8211; Dans une sauteuse faire rissoler les lardons avec une cuill\u00e8re d&rsquo;huile,<br \/>\najouter le chou \u00e9minc\u00e9, les ciboules, remuer, baisser le feu, laisser mijoter<br \/>\n15 mn.<br \/>\n4\u00a0&#8211; Hors du feu ajouter le foie gras en d\u00e9s, disposer chaque feuille de chou<br \/>\nblanchie sur un carr\u00e9 de film \u00e9tirable,\u00a0 placez-y une boule de farce, refermer la<br \/>\nfeuille, puis le film, d\u00e9poser les choux dans un cuit-vapeur et laisser cuire 20<br \/>\nmn.<br \/>\n5\u00a0&#8211; D\u00e9poser les magrets c\u00f4t\u00e9 peau dans une po\u00eale chaude, cuire \u00e0 feu moyen 7 mn,<br \/>\nretourner, cuire 4 mn, les envelopper de papier alu, d\u00e9graisser la po\u00eale, verser<br \/>\nla bi\u00e8re, laisser r\u00e9duire de moiti\u00e9, mouiller de bouillon et faire bouillir 5<br \/>\nmn, ajouter le jus rendu par les magrets, filtrer la sauce, lui incorporer le<br \/>\nbeurre en d\u00e9s en fouettant.<br \/>\n6\u00a0&#8211; Sur les assiettes, poser les magrets tranch\u00e9s et un chou sorti de son film,<br \/>\nentourer de sauce, parsemer de graines de s\u00e9same grill\u00e9es et servir vite.<br \/>\nVin : un c\u00f4te-de-nuits-villages \u00e0 servir vers 16-18\u00b0<br \/>\nTruc : Serrer bien les choux dans le film, pour cela torsader le film sous les<br \/>\nchoux avant de les d\u00e9poser dans le cuit-vapeur<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Pr\u00e9paration : 30 mn Mac\u00e9ration : 30 mn Cuisson : 35 mn Ingr\u00e9dients (pour 6 personnes) : &#8211;
