Portez le lait \u00e0 \u00e9bullition. Fouettez les jaunes avec le sucre jusqu\u2019\u00e0 ce qu\u2019ils blanchissent, incorporez la ma\u00efzena. Versez dessus le lait bouillant en filet en fouettant. Faites \u00e9paissir sur feu moyen en remuant jusqu\u2019\u00e0 l\u2019\u00e9bullition. Laissez refroidir.<br \/>\n2 &#8211; Travaillez le beurre en pommade. Incorporez la cr\u00e8me p\u00e2tissi\u00e8re et le pralin\u00e9, en fouettant afin de bien a\u00e9rer la masse.<br \/>\n3 &#8211; Allumez le four \u00e0 180\u00b0C . Couvrez la plaque de papier sulfuris\u00e9. Portez l\u2019eau et le lait \u00e0 \u00e9bullition avec le beurre, le sucre et une pinc\u00e9e de sel. Ajoutez la farine et la ma\u00efzena d\u2019un coup. Remuez vivement jusqu\u2019\u00e0 ce que la p\u00e2te se d\u00e9tache des parois. Eteignez le feu, incorporez les oeufs un \u00e0 un en fouettant avec vigueur. Cessez de fouetter quand la p\u00e2te est lisse.<br \/>\n4 &#8211; Faites un cercle de p\u00e2te de 20 cm sur la plaque avec une poche \u00e0 douille. Formez un second cercle dessus puis un troisi\u00e8me. D\u00e9corez d\u2019amandes.<br \/>\n5 &#8211; Faites dorer 30 mn au four. Laissez refroidir au four \u00e9teint, porte entrouverte.
