M\u00e9langer avec une fourchette jusqu&rsquo;\u00e0 l&rsquo;obtention d&rsquo;une p\u00e2te homog\u00e8ne.<br \/>\n2 &#8211; Mettre cette farce dans le ventre de la pintade. Coudre les deux ouvertures, \u00e0 la base du cou et \u00e0 l&rsquo;extr\u00e9mit\u00e9 oppos\u00e9e. Disposer la pintade dans un plat, la mouiller avec le reste du porto, ajouter l&rsquo;huile et le thym ; couvrir et laisser reposer 24 heures, en retournant deux fois la volaille.<br \/>\n3 &#8211; Faire chauffer le beurre dans une cocotte ; y-mettre la pintade bien \u00e9goutt\u00e9e de la marinade (qu&rsquo;il faut conserver) et la faire dorer de tous les c\u00f4t\u00e9s \u00e0 feu assez vif.
