Alignez les queues de langoustines cuites et d\u00e9cortiqu\u00e9es dans le fond.<br \/>\n2 &#8211; Dans une casserole : d\u00e9posez les t\u00eates de langoustines et arrosez d&rsquo;un filet d&rsquo;huile d&rsquo;olives. Au premier fr\u00e9missement, flambez vos t\u00eates avec le jack daniels. Laissez le feu s&rsquo;\u00e9teindre de lui-m\u00eame. Nappez ensuite de cr\u00e8me fra\u00eeche puis portez \u00e0 \u00e9bullition. R\u00e9cup\u00e9rez la cr\u00e8me en passant la pr\u00e9paration au chinois, remettez cette cr\u00e8me dans la casserole puis ajoutez le lait, m\u00e9langez et laissez sur feu doux votre casserole.<br \/>\n3 &#8211; D\u00e9layez la ma\u00efzena avec la cuill\u00e8re \u00e0 soupe d&rsquo;eau. Versez sur votre pr\u00e9paration en remuant au fouet. \u00c0 la premi\u00e8re \u00e9bullition c&rsquo;est cuit, retirez du feu.<br \/>\n4 &#8211; Ajoutez votre concentr\u00e9 de tomates, votre safran et assaisonnez de sel et poivre. Fouettez l\u2019ensemble. Ajustez la sauce cr\u00e9meuse si vous la trouvez trop \u00e9paisse en ajoutant de la cr\u00e8me fra\u00eeche liquide si besoin.<br \/>\n<strong>Pour finir :<\/strong><br \/>\nNappez la pr\u00e9paration sur les langoustines. Parsemez de gruy\u00e8re r\u00e2p\u00e9 et gratinez le tout au four pendant 10 minutes environ \u00e0 180\u00b0.
