Retirez du feu.<br \/>\n2 Mettez l&rsquo;huile \u00e0 chauffer dans une po\u00eale \u00e0 rev\u00eatement anti-adh\u00e9sif. Saisissez-y les pav\u00e9s de biche \u00e0 feu assez vif, 1 min de chaque c\u00f4t\u00e9. R\u00e9duisez le feu et laissez cuire encore de 1 \u00e0 2 min sur chaque face. D\u00e9posez les pav\u00e9s sur un plat chaud. Salez et poivrez.<br \/>\n3 Jetez la graisse de cuisson. Versez le bouillon et le mad\u00e8re dans la po\u00eale, portez \u00e0 \u00e9bullition en grattant avec une spatule. R\u00e9duisez le feu, incorporez la moutarde et la cr\u00e8me. Mettez cette sauce dans une sauci\u00e8re chaude et servez.<br \/>\n<strong>Conseils :<\/strong><br \/>\n\u25c6 Arrosez les pav\u00e9s de biche avec le mad\u00e8re, ajoutez 1 bouquet garni et du vin rouge \u00e0 hauteur, laissez mariner au r\u00e9frig\u00e9rateur.
