2 beaux morceaux de selle d&rsquo;agneau ou morceaux tendres d\u00e9soss\u00e9s<br \/>\n&#8211; 4 pommes de terre<br \/>\n&#8211; 1\/2 courgette<br \/>\n&#8211; 1 grosse tomate<br \/>\n&#8211; 1 carotte<br \/>\n&#8211; 1 gros oignon<br \/>\n&#8211; olives vertes<br \/>\n&#8211; 1\/2 verre d&rsquo;huile d&rsquo;olive vierge<br \/>\n&#8211; cumin<br \/>\n&#8211; m\u00e9lange 14 \u00e9pices (dont muscade, gingembre, coriandre, cannelle&#8230;)<br \/>\n&#8211; safran jaune (pour la coloration)<br \/>\n&#8211; sel et poivre<br \/>\n&#8211; 1\/2 verre d&rsquo;eau<br \/>\n<strong><span style=\"color: #ff00ff;\">Pr\u00e9paration :<\/span><\/strong><br \/>\n1 &#8211; Verser 3\/4 de cuill\u00e8re \u00e0 soupe d&rsquo;huile dans le plat \u00e0 tajine directement pos\u00e9 sur le feu ou la plaque.<br \/>\n2 &#8211; Lorsque l&rsquo;huile est bien chaude, faire revenir la viande de chque c\u00f4t\u00e9 (environ 10 mn<br \/>\n3 &#8211; Baisser un peu le feu et placer les l\u00e9gumes, lav\u00e9s et d\u00e9coup\u00e9s grossi\u00e8rement, en pyramide sur la viande, des plus fermes aux plus tendres (pommes de terre, puis carotte, puis courgettes, puis oignons), en les intercalant de cumin, 14 \u00e9pices, sel et poivre.<br \/>\n4 &#8211; Arroser d&rsquo;un peu d&rsquo;eau, saupoudrer de safran jaune, pour donner de la couleur et d\u00e9poser les olives vertes.<br \/>\n5 &#8211; Couvrir et laisser cuire \u00e0 feu doux, pendant 30 mn.<br \/>\n6 &#8211;
