Dans cette recette on utilise\u00a0les fanes. Les cuire 5\u2019 \u00e0 l\u2019eau bouillante sal\u00e9e, les \u00e9goutter.<br \/>\n2 &#8211; Apr\u00e8s les avoir \u00e9pluch\u00e9es, on cuit les asperges \u00e0 l\u2019eau bouillante sal\u00e9e\u00a0pendant 10\u2019.<br \/>\n3 &#8211; Pour les pois mange-tout, les cuire 6\u2019 \u00e0 l\u2019eau gazeuse afin de conserver leur couleur verte. Les \u00e9goutter.<br \/>\n4 &#8211; On prend les blancs de poulet que l\u2019on ouvre en deux et que l\u2019on aplatit bien.<br \/>\n5 &#8211; On sale et on poivre des 2 cot\u00e9s. On pose les pois mange-tout sur toute\u00a0la surface ensuite on pose une tranche de jambon sec, on enduit toute\u00a0la surface avec le m\u00e9lange de cr\u00e8me Brid\u00e9lice\u00a0et thym effeuill\u00e9,\u00a0on pose l\u2019asperge au milieu on sale et on poivre.<br \/>\n6 &#8211; On referme cette pr\u00e9paration dans un film alimentaire qui supporte\u00a0la chaleur et on cuit \u00e0 la vapeur, pendant 15\u2019.<br \/>\n7 &#8211; Pendant ce temps on reprend les fanes de radis que l\u2019on essore \u00e0 la main\u00a0le plus possible, on les met dans un mixeur et on ajoute 4 \u00e0 5 c.\u00e0.s.\u00a0de cr\u00e8me fluide Brid\u00e9lice.<br \/>\n8 &#8211; On d\u00e9coupe nos blancs de poulet que l\u2019on dresse avec des f\u00e8ves revenues\u00a0avec des morceaux de jambon sec, et on sert la sauce dans un verre \u00e0 part.<br \/>\n<strong>Astuces :\u00a0<\/strong><br \/>\nCuire les pois mange-tout \u00e0 l\u2019eau gazeuse ou \u00e0 l\u2019eau contenant\u00a0du bicarbonate.
