On remarque d\u00e8j\u00e0 la formation de la liaison (coagulation de l&rsquo;oeuf et empois d&rsquo;amidon).<br \/>\n7 Verser l&rsquo;appareil\u00a0obtenu dans la casserole contenant le reste du lait et porter doucement \u00e0 \u00e9bullition sans cesser de remuer, au fouet (et dans tous les \u00ab\u00a0coins\u00a0\u00bb de la casserole).<br \/>\n8 Lentement la coagulation appara\u00eet. Les amidons de Ma\u00efs\u00a0d&rsquo;abord puis la farine cuit.
