Les\u00a0passer\u00a0dans la farine, puis dans l&rsquo;\u0153uf battu en omelette, et enfin dans les pistaches concass\u00e9es ou dans la\u00a0chapelure\u00a0(biscottes \u00e9miett\u00e9es). Compter 2 crevettes \u00e0 la pistache et 1 crevette \u00e0 la\u00a0chapelure\u00a0par personne.<br \/>\n2 &#8211; S\u00e9cher les Saint-Jacques \u00e0 l&rsquo;aide de papier absorbant, puis pr\u00e9parer les brochettes en intercalant ainsi : crevette pistache &#8211; Saint-Jacques &#8211; crevette\u00a0chapelure\u00a0&#8211; Saint-Jacques &#8211; crevette pistache.\u00a0R\u00e9server\u00a0au frais en attendant la cuisson.<br \/>\n3 &#8211; Faire une r\u00e9duction de balsamique pour la d\u00e9co : mettre 2 cuill\u00e8res \u00e0 soupe de vinaigre balsamique avec 2 cuill\u00e8res \u00e0 soupe de sucre dans une petite casserole et porter \u00e0 petite \u00e9bullition, jusqu&rsquo;\u00e0 une consistance nappante.<br \/>\n4 &#8211; Pr\u00e9parer les assiettes en mettant une poign\u00e9e de salade, parsem\u00e9e de queues d&rsquo;\u00e9crevisses et assaisonn\u00e9e d&rsquo;une vinaigrette au balsamique. D\u00e9corer avec la r\u00e9duction de balsamique avant de cuire les brochettes.<br \/>\n5 &#8211; Mettre une noisette de beurre dans une po\u00eale bien chaude, puis faire revenir rapidement les brochettes.
